(209)475-1547 <br /> Program Element: 1600 - FOOD PROGRAM Complaint#: C00046004 <br /> DESCRIPTION OF COMPLAINT ALLEGATIONS <br /> The San Joaquin County Environmental Health Department received the following complaint: <br /> COMPLAINANT ALLEGES THEY NOTICED A METAL TRAY ON THE FLOOR COLLECTING USED COOKING OIL THAT <br /> WAS LEAKING UNDERNEATH TWO FRYERS. ALSO NOTICED AN EMPLOYEE SCOOPING THE USED COOKING OIL <br /> FROM THE METAL TRAY UNDERNEATH THE FRYERS BACK INTO THE FRYERS BEING USED TO COOK THE <br /> CHICKEN. <br /> VIOLATIONS AND CORRECTIVE ACTIONS <br /> Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br /> 113700.All violations must be corrected within specified timeframe. Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately. Noncompliance may warrant immediate closure of <br /> the food facility. <br /> OVERALL INSPECTION NOTES AND COMMENTS <br /> FOOD ITEM --LOCATION --TEMP 0 F--COMMENTS <br /> No Temperature Data Collected <br /> NOTES <br /> I spoke to the Person In Charge was of not aware of complaint prior to my visit. <br /> Per Person In Charge, oil is dispensed from deep fryers into an oil pan and is filtered back into deep fryers. <br /> Oil is changed two times per day. <br /> Currently, the oil filtering machine is in disrepair at this time, per person in charge, and is going to be fixed possibly by the end <br /> of this week. <br /> I observed oil pan under deep fryer. Pan appears clean and is cleaned daily per person in charge. <br /> I explained to the Person In Charge that the oil pan should be placed under the deep fryers only when filtering oil, and oil <br /> filtering machine is to be utilized as to minimize the potential for cross contamination. <br /> Employee removed pan under deep fryers and a stored pan next to fryers until use. <br /> I directed employee to wash and sanitize oil pan prior to use. <br /> The person in charge is responsible for ensuring that the above mentioned facility is in compliance with all applicable sections of the California Health and <br /> Safety Code.
