OWNER HIRING HOMELESS TO WORK. (C) DOES NOT <br /> BELIEVE THEY HAVE FOOD HANDLERS. FLOOR WAS GREASY. EMPLOYEE WAS SMOKING INSIDE WHILE <br /> WASHING TRAYS. ONE EMPLOYEE LIVING IN RESTAURANT AND ANOTHER OUTSIDE IN STORAGE UNIT. <br /> VIOLATIONS AND CORRECTIVE ACTIONS <br /> Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br /> 113700.All violations must be corrected within specified timeframe. Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #1 Demonstration of Knowledge <br /> OBSERVATIONS:Newly hired employees don't have food handler cards. Provide cards within 30 days. <br /> CALCODE DESCRIPTION:All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br /> assigned duties. (113947)Food facilities that prepare,handle or serve non-prepackaged potentially hazardous food,shall have an <br /> employee who has passed an approved food safety certification examination. (113947-113947.1)Any food handler hired after June 1, <br /> 2011 shall obtain a Food Handler Card within 30 days(113948). <br /> #45 Floors,Walls, Ceilings; Clean and Maintained <br /> OBSERVATIONS:Hard to reach floors, at the cook line, underneath the fryers and griddle, underneath the reach in freezer <br /> at the cook line, underneath prep tables, underneath the prep sink and 3 comp sink, behind back 1 D Dairy cooler, are very <br /> greasy. Detail clean today and as needed. <br /> CALCODE DESCRIPTION:The walls/ceilings shall have durable,smooth,nonabsorbent,light-colored,and washable surfaces. All floor <br /> surfaces, other than the customer service areas, shall be approved, smooth, durable and made of nonabsorbent material that is easily <br /> cleanable.Approved base coving shall be provided in all areas,except customer service areas and where food is stored in original <br /> unopened containers. Food facilities shall be fully enclosed. All food facilities shall be kept clean and in good repair. By inspecting the facility, I didn't see any homeless working in facility. I saw <br /> newly hired employees that required to have food handling training. Floor in the back kitchen at the cook line, at prep sink and <br /> at the back washing area is greasy. I didn't see any of the present employees smoking in the back kitchen. I saw a pillow and <br /> couple of blankets at the office. Owner stated that she is using them in case she needs to rest in the middle of the day.
