SANOAQU I N Environmental Health Department <br /> COUNT -( IY <br /> { put' <br /> �1f flCri 3S grows here, <br /> Time In: 10:55 am <br /> tlp <br /> Time Out: 12:19 pm <br /> Food Program Complaint Inspection Report <br /> Name of Facility: KFC&A&W Date: 02/27/2018 <br /> Address: 2290 Grant Line RD, TRACY 95377 <br /> Owner/Operator: SANCHEZ 101, INC Telephone: (209)834-0786 <br /> Program Element: 1600-FOOD PROGRAM Complaint#: C00045830 <br /> DESCRIPTION OF COMPLAINT ALLEGATIONS <br /> The San Joaquin County Environmental Health Department received the following complaint: <br /> C00045830 states: "COMPLAINANT ALLEGES THEY WERE AT THE FACILITY ON 2/20/2018 AND"WITNESSED THE <br /> STAFF POUR OLD GREASE, JET BLACK, INTO THE FRYER THAT WAS JUST CLEANED."COMPLAINANT STATED <br /> THEY WERE TOLD BY STAFF THAT THEY RECYCLE THE GREASE,THAT IS THEIR STANDARD SET-UP. <br /> COMPLAINANT ASKED THE MANAGER AND HEAD FRYER AND THEY SAID THEY WOULD EMPTY THEM OUT AND <br /> RE-FRY CHICKEN AND FRIES.AS THEY WERE DOING THIS, COMPLAINANT WATCHED THEM TAKE A HANDFUL <br /> OF COOKING CRYSTALS AND PLACE THEM INTO THE FRYER, THEN THEY THREW COMPLAINANTS FOOD IN THE <br /> FRYER THAT CONTAINED CRYSTALS." <br /> VIOLATIONS AND CORRECTIVE ACTIONS <br /> Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br /> 113700.All violations must be corrected within specified timeframe. Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> OVERALL INSPECTION NOTES AND COMMENTS <br /> FOOD ITEM--LOCATION--TEMP°F--COMMENTS <br /> No Temperature Data Collected <br /> NOTES <br /> Manger on duty is aware of the complaint. Per Manger,the cooking crystals in question is magnasol-an oil polishing powder. <br /> Manager states she was not working at the time of the alleged incident, but that no employee is ever trained to place food <br /> into the oil while the oil is polishing. Obtained a copy of the oil polishing procedure.
