All ice machines and bins, food preparation sinks, dishwashing sinks (dish- <br /> washing units), display cases and refrigeration units and any other food service <br /> equipment which discharge liquid waste shall be disposed therein by an indirect <br /> connection through an air gap (Height of air gap must equal two times the inside <br /> diameter of the discharge tube. H=2xl.D.) into a floor sink or other approved <br /> waste receptors. All floor sinks are to be positioned to be readily cleanable, <br /> accessible for inspections, and must be flush with finished floor. Do not place <br /> floor sinks inside walk in refrigeration units or cabinets (CRFC 114100 and 114150). <br /> You must keep this office informed of the construction progress. An inspection must be <br /> scheduled at least 48 hours in advance when the facility is ready to open with all <br /> equipment installed and thorough cleaning completed. A fee of $98.00 per hour may be <br /> assessed for any additional inspections, re-inspections, or consultations. <br /> Any item(s) inadvertently overlooked in the plan check process, which is not in compliance <br /> with applicable County Codes and/or State Laws, shall be constructed or reconstructed <br /> upon request of the Environmental Health Department. Interior workmanship, equipment, <br /> or materials will not be accepted for the construction or operation of a food facility. Any <br /> variance from the requirements outlined in this letter will require written approval from the <br /> EHD. <br />
