Time In: 9:30 am <br /> Time Out: 10:30 am <br /> Food Program Complaint Inspection Report <br /> Name of Facility: RIO LAS PALMAS Date: 05/29/2019 <br /> Address: 877 E MARCH LN, STOCKTON 95207 <br /> Owner/Operator: FIVE STAR RIO LAS PALMAS LLC Telephone: (209)957-4711 <br /> Program Element: 1600-FOOD PROGRAM Complaint#: C00049846 <br /> DESCRIPTION OF COMPLAINT ALLEGATIONS <br /> The San Joaquin County Environmental Health Department received the following complaint: <br /> COMPLAINANT ALLEGES QUALITY OF FOOD IS HORRIBLE, RESIDENTS ARE SERVED CHICKEN AND CARROTS <br /> FOR MULTIPLE MEALS IN A ROW, CHICKEN IS OFTEN RAW/UNCOOKED IN THE MIDDLE. COMPLAINANT HAS <br /> ALERTED STAFF TO THE PROBLEM BUT THEY ARE STILL SERVED RAW CHICKEN. <br /> VIOLATIONS AND CORRECTIVE ACTIONS <br /> Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br /> 113700.All violations must be corrected within specified timeframe. Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> OVERALL INSPECTION NOTES AND COMMENTS <br /> FOOD ITEM—LOCATION--TEMP°F—COMMENTS <br /> No Temperature Data Collected <br /> NOTES <br /> As per manager,she is aware of the part that says they serve chicken repetitively but she is not aware if the part saying <br /> chicken is served raw and uncooked. In the kitchen, I observed a cook starting to prepare chicken soup by shredding cooked <br /> chicken. Chicken was cooked last night in the oven at 350F for one hour then cooled rapidly by placing it in container and <br /> placed it in walk in cooler at 41 F.At 9AM, cook started to re heat the chicken in steamer at 198F for 20 mins to be shredded <br /> after to prepare the soup. I inspected a piece of cooked chicken, I didn't find any bloody spots and the meat fibers were easily <br /> shredded.
