COMPLAINANT HAS <br /> ALERTED STAFF TO THE PROBLEM BUT THEY ARE STILL SERVED RAW CHICKEN. <br /> VIOLATIONS AND CORRECTIVE ACTIONS <br /> Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br /> 113700.All violations must be corrected within specified timeframe. Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> OVERALL INSPECTION NOTES AND COMMENTS <br /> FOOD ITEM—LOCATION--TEMP°F—COMMENTS <br /> No Temperature Data Collected <br /> NOTES <br /> As per manager,she is aware of the part that says they serve chicken repetitively but she is not aware if the part saying <br /> chicken is served raw and uncooked. In the kitchen, I observed a cook starting to prepare chicken soup by shredding cooked <br /> chicken. Chicken was cooked last night in the oven at 350F for one hour then cooled rapidly by placing it in container and <br /> placed it in walk in cooler at 41 F.At 9AM, cook started to re heat the chicken in steamer at 198F for 20 mins to be shredded <br /> after to prepare the soup. I inspected a piece of cooked chicken, I didn't find any bloody spots and the meat fibers were easily <br /> shredded.
