Soil Suitability&Nitrate Loading Study Page 4 <br /> Proposed Oak Farm vineyards Expansion,Lodi CA <br /> Project No. 670AC <br /> June 17,2013 <br /> 3.3 Existing and Proposed Septic System Usage <br /> As described above, there are two existing septic systems, which will remain in use. A <br /> proposed new septic system will serve the winemaking operation and new wine tasting room. <br /> According to the Oak Farm marketing plan, the operation will employ three full-time <br /> workers for winemaking, one for wine tasting,and four for special events. Irl addition, there <br /> will be two part time wine production employees, three part-time tasting room employees, <br /> and four part time special events employees. It is assumed that part-time employees will <br /> work an average of half time. <br /> The tasting room is expected host up to 100 customers on its busiest days and average 400 <br /> per week. In addition to routine winemaking operations, 16 special marketing events per <br /> year will be held with a maximum attendance of 150 people. A commercial kitchen is being <br /> constructed, but plans call for it to be almost entirely us <br /> coo ed/prepared. <br /> The San Joaquin County Sewage Standards (EHD, 2003), Table 6.1.15, offers guidance for <br /> assumptions regarding septic flow rates. The table does not, however,cover all possibilities. <br /> In such cases flow estimates are to be based on actual water use. Visitors to a tasting room <br /> and the periodic special events do not fit well into any category of the EHD table. It is <br /> assumed that each tasting room customer will use the restroom two times and special events <br /> guests will use the restroom 4 times during their visits. Each restroom use will produce 2 <br /> gallons of sewage. The residence will continue with its existing septic system. The existing <br /> Special Events/Wine Tasting system will continue in use for the special events activities.
