Parrish&Sons. <br /> Our approved septic plan had provided for two 4"sewer lines from the Existing Odd Fellows <br /> (100F)Building to the new septic tanks. One line would be from the kitchen sink to the 1200 <br /> gallon grease trap and the other sewer line would be from the existing restrooms to the 2000 <br /> gallon primary tank. <br /> The sewer line from the sink to the grease trap was inadvertently left out during installation of <br /> the tanks. The existing 1001=bullding will be used as a retail chocolate shop and wilt also <br /> serve desserts, contain an espresso bar, and an Ica cream bar. We do not pian to fry foods. <br /> It is my understanding that a connection to a grease trap would not be required for this type of <br /> installation. <br /> Please let me know if I have misunderstood this requirement. Although it would be difficult to <br /> install the missing line it can be done as the tanks have not been covered with concrete yet. It <br /> would be extremely difficult to make the changes once the concrete driveway Is poured in about <br /> ten days. If the kitchen facility for this type of facility requires connection to a grease trap now <br /> would be the time to do it. <br /> I appreciate your asst ante on this very important project.
