If each faucet volume is 2.5 gals/min, we find: 2.5 gals/min/faucet x 5 faucets = 12.5 gals/min. 420
gals- 12.5 gals/min=34 min. Each faucet would have to run full force for 34 continual minutes to
equal the assigned kitchen water usage of 420 gals/day. Therefore, it is extremely unlikely the
calculated water use volume would be exceeded if wash procedures referenced above are followed.
Grease interceptor tanks are strictly for fats, oil and grease (FOG) originating from the kitchen area.
The tanks are not designed to digest other organic matter such as waste vegetable pieces, etc. It is
imperative that all food waste products are handled as solid wastes and disposed of as such Solid
food waste products must not be introduced into the grease interceptor tank Only conventional
septic tanks handle solid organic wastes. Additionally, excessive organics place elevated demands
on the decomposition process and increase the nitrate loading potential. Even excessive FOG
should be handled as a solid waste and disposed of accordingly instead of flushed into the grease
interceptor tank. By scraping/wiping out pots and pans that have a significant amount of oils/grease
content before washing will reduce the organic loading to the grease tank and promote longer pump-
out intervals.
It is also important that hot water be used in the pots/pans washing procedures so there is sufficient
dissociation of the FOG from the wash water. Additionally, a phosphate free dishwashing soap
should be used. Phosphates disrupt the biology of conventional septic tanks. A supplier of"septic
tank safe" dishwashing soaps can be found at WalMart or Wexco Environmental.
If there should be any questions regarding the information contained in this Addendum report,
please contact the undersigned.
Respectfully submitted, a'M o f e s s}osa
CHESNEY CONSULTING 4 ori' Chess
a
° No.75479 CD
ti
Don Che ey, PE ria Cfvi
Registered Civil Engin r#C75479 re of CaOo`
Attachments:
Plumbing Plans
Photographic Plates
Page -2-
Chesney Consulting
