Hazelton Avenue <br /> Stockton, CA 95205-6232 <br /> RE : WESTERN TOMATO GROWERS DE-GREENING ROOMS <br /> Site Approval Application NSA-94-56 <br /> Mr. Larrouy, <br /> The above referenced operation, Western Tomato Growers, is a fresh <br /> market tomato packing facility. Tomatoes are hand picked in fields <br /> and transported to packing operations. <br /> The fruit is washed, graded, waxed, sized by grade and boxed into <br /> 25# containers . The product is palletized 80 cartons per unit. <br /> In this operation tomatoes are left whole, there is no peeling, <br /> slicing, dicing or squeezing of the product. The only waste <br /> product is classified as culls. The culls are transported to feed <br /> lots or dairies and used as feed for cows. <br /> The palletized units are placed in the de-greening facility at <br /> temperatures of 66 to 68 degrees, humidity of approximately 889E to <br /> 92%. Tomatoes in the ripening process naturally give off ethylene. <br /> The de-greening process is to facilitate the ripening process. <br /> This is accomplished by keeping tomatoes at optimum temperature and <br /> humidity and adding a minute amount of ethylene by using an <br /> ethylene generator . Basically , an ethylene generator consists of <br /> a one quart reservoir for holding fruit ripener 1 ( a product <br /> containing 90% ethanol , EPA Reg. #58502- 1 , EPA Est. #6i656-NC-001 ) , <br /> a small electric hot plate and a timer . The timer periodically <br /> drops one drop of fruit ripener 1 fluid. When the fluid drops onto <br /> the hot plate, the ripener fluid is then converted to a minute <br /> amount of ethylene.
