Mike Huggins <br /> In regard to stainless steel tank cleaning please see attached <br /> procedure.In our facility we will have approximately 50,000 <br /> gallons of copperage.Assumeing we clean each tank twice a year <br /> and drain completely we would discharge the following.2,000 <br /> gallons of total rinse water,50 pounds of soda ash,and 50 pounds of <br /> citric acid. <br /> In regard to barrel racking less than a quarter of one percent <br /> of wine is lost in this process.We will have approximately 40,000 <br /> gallons of wine in barrel storage.Assumeing we rotate our barrel <br /> copperage once a year we will discharge less than 100 gallons of <br /> wine into our basin.And approximately 800 gallons of water. <br /> Thank You Randy Taylor <br />
