rra
hese estimated future flows are based on the number of employees/customers/contractors, etc. for
future winery capacity of 200,000 tons crushed and 20 million cases of wine. The estimatedorking-day domestic wastewater flows for crush and non-crush seasons are estimated by
ultiplying the number of people by 15 gpd.
As noted in Table 3, Appendix D, individual flows are itemized and quantified from each
individual source. Since the nitrate loading equation requires total yearly flows, this number is
used in the equation. No process wastewater from the winery operations will be introduced into
the domestic sanitary system. A separate management system is in place for the management of
winery process wastewater.
✓ Wastewater Flow Characteristics
To adequately analyze the wastewater influent flow characteristics, septic tank influent samples
were retrieved from two septic tanks receiving differing wastewater flows at separate areas of the
winery. The first tank sampled was from the front office complex, which would be expected to
have general office wastewater characteristics of low-to-medium strength wastewater. A
summarization of the constituents tested are illustrated below in Table 5.
The second septic tank sampled was from the Bottling facility. Because of the "shift-work"nature
of this part of the winery, which includes an employee break area, influent wastewater
characteristics would be expected to be high-strength wastewater. Test results confirm this, and
are summarized in Table 6 below.
Quantifying nitrate-nitrogen loading from the analytical test results was accomplished by
examination of Table 4, found in Appendix D. As noted in the right-hand column, the "Bottling
Warehouse" is projected to contribute 44% of the total sanitary wastewater loading. Consequently,
the remaining areas of the winery contribute 56%of the total wastewater flow. To conservatively
estimate Total Nitrogen within the entire wastewater flows, 50% of the Total Nitrogen from the
Office septic tank was added to 50%of the Total Nitrogen found in the Break Area septic tank, for
an Average Total Nitrogen concentration of 112.4 ppm. This concentration is used in the nitrate
loading calculations.
The assumption is made that the Office influent is, and will continue to be similar to the remaining
sources of sanitary wastewater throughout the winery, and the Bottling facility wastewater
characteristics will remain as analyzed.
LL
8
Chesney Consulting
