Methodology of Cooking <br /> Below is a summary of how we cook each of the products in our Krispy Krunchy Chicken Program. <br /> Method of Operation: <br /> All food is cooked and placed in a hot food case which is displayed at the front counter for purchase by the <br /> customer.When an order is placed by the customer, the food is packaged by store staff and handed to the <br /> customer. Orders are packaged using tongs and gloved hands. <br /> Food Storage and Preparation <br /> All food (chicken, biscuits, shrimp, fish, chicken bites, boudin bites, potato wedges) are PRE-PACKAGED and <br /> PREPARED food. None of the food items need cleaning or preparation before cooking. NO THAWING of any <br /> FOOD ITEMS are necessary. NO CUTTING, SLICING, WASHING of any FOOD will be taking place on-site <br /> therefore NO FOOD PREP SINK will be needed. <br /> Chicken-Fresh Food (Cooked with Fryer) <br /> All chicken will be stored in the walk-in cooler with a temperature of 35 degrees or lower. <br /> All chicken comes raw, cut and pre-marinated in prepackaged controlled vacuum packed plastic bags. <br /> No additional preparations is need. Chicken goes into containers which then gets hand breaded and placed <br /> right into the Fryer. Once chicken is cooked, chicken gets placed into the Hot Food Case for up to 3 hours. <br /> Frozen Food (Cooked with Fryer) <br /> All side items (potato wedges, shrimp, chicken bites, boudin bites, chicken sandwich patties and fish)will be <br /> stored in the freezer. <br /> All side items (potato wedges, shrimp, chicken bites, boudin bites, chicken sandwich patties and fish) are <br /> frozen and dropped directly into fryer from the freezer. All items are cooked in the fryer at 350 degree. <br /> No additional preparation is needed before hand. <br /> Potato Wedges are cooked in the fryer and once cooked, placed into the Hot Food Case for up to 2 hours. <br /> Shrimp is cooked in the fryer and once cooked, placed into the Hot Food Case for up to 2 hours. <br /> Chicken/Boudin Bites are cooked in the fryer and once cooked, placed in the Hot Food Case for up to 3 hours <br /> Chicken Sandwich Patties are cooked in the fryer and once cooked, placed in the Hot Food Case for up to 3 <br /> hours <br /> Fish is cooked fryer and once cooked, placed into the Hot Food Case for up to 2 hours <br /> Biscuits <br /> Biscuits are stored in the freezer. <br /> Biscuits are cooked in the convection oven and are the ONLY products cooked in the convection oven which <br /> does not produce any grease laden vapors. <br /> Once cooked, Biscuits are placed into the Hot Food Case for up to 2 hours <br /> Mac N Cheese (Cooked in Microwave) Mac and Cheese arrive frozen and are stored in the freezer and <br /> thawed in the cooler. <br /> Mac N Cheese bags are heated in the microwave to 165 internal temperature. <br /> Mac N Cheese is then placed into foam bowls which are then placed into the Hot Food Case for up to 3 hours <br />
