Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #1 Demonstration of Knowledge <br /> OBSERVATIONS:The Food Manager certificate on site is labeled as"Food Manager"but is only good for 2 years. <br /> Inspector will check with supervisor to determine if the 5 year Food Safety Certificate(Food Manager)will be required now <br /> or after the existing certificate expires on 10-17-2018. <br /> CALCODE DESCRIPTION:All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br /> assigned duties. (113947-113947.1)Any food handler hired after June 1, <br /> 2011 shall obtain a Food Handler Card within 30 days(113948). <br /> #23 Rodents, Insects or Animals Inside Facility <br /> OBSERVATIONS:There are multiple flies in the facility.Take immediate action to reduce the number of flies in the facility <br /> (maintain doors closed, use only food safe sprays, contract with a licensed pest control company). <br /> CALCODE DESCRIPTION:Each food facility shall be kept free of vermin:rodents(rats,mice), cockroaches,flies.(114259.1, 114259.4, <br /> 114259.5) <br /> #34 Warewashing Facilites Maintained <br /> OBSERVATIONS:Chlorine sanitizer test strips are not available. Obtain and use chlorine sanitizer test strips.These can be <br /> found at Smart and Final or Cash and Carry. <br /> CALCODE DESCRIPTION:Food facilities that prepare food shall be equipped with warewashing facilities. Testing equipment and <br /> materials shall be provided to measure the applicable sanitization method.
