Kennedy/Jenks Consultants
Chapter 4: Process Water Characterization Work Plan
This work plan presents an outline for characterization of process water at The Wine Group
Franzia Winery and was prepared by Kennedy/Jenks in response to Item 2.c of the CAO.
4.1 Introduction
The objective of Chapter 4, the Process Water Characterization Work Plan (PWC Work Plan) is
to present a plan to quantitatively and qualitatively characterize the process water discharged to
the vineyards for land application treatment and disposal. To assist with potential source
reduction evaluations, some of the contributing streams will be characterized. A general
description of Facility operations was presented in Section 1.3.2.
4.2 Process Water Management System Description
As mentioned previously, water used in Facility operations is obtained from four groundwater
production wells (there is a fifth well that is no longer used) located on site and process water is
generated by the following operations: crushing/destemming, pressing, racking, fining, tank
cleaning, general washdown, process equipment sterilization, wine processing, water softening,
and the cooling system (cooling tower blowdown and non contact cooling water). Stormwater
runoff is also directed into the process water system for application to the vineyards.
Process water is collected by floor drains and is piped to primary and secondary sumps. The
secondary sump pumps are equipped with a flow meter.
4.2.1 Process Water Stream Identification
Several process water streams contribute to flow discharged to the Facility sumps. Most of the
streams are associated with a specific operational process and produce individual process
water streams. Winery process area cleanup and sanitation occurs in several locations around
the Facility. Cleanup and sanitation procedures use wash water for purposes such as rinsing
floors, tanks, and equipment. The cleanup and sanitation water is collected from various areas
around the Facility and piped to the southeast and southwest sumps.
The following individual process water streams have been identified at the Facility.
Wine Ion Exchange: The ion exchange columns, one cation column and one anion
column, are used infrequently during the wine stabilization process. The ion exchange
resin regeneration process produces a process water stream.
• Water Softening: Two main water softeners are used to condition the water supply prior
to use within the Facility. The water softener regeneration produces a brine process
water stream.
• Bottling: The Facility uses a one pass system for bottling room sanitation. The cleaning
system produces a process water stream.
Groundwater Protection Work Plan, The Wine Group Page 4-1
Franzia Winery, Ripon, California
g+sq n'n e.c:C'Fl- 12, e _9w11 ' "'a sno tryan d✓tae
