All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodbome illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br />#1 Demonstration of Knowledge <br />OBSERVATIONS: One person shall obtain the 5 year Food Safety Certificate within 60 days. When the certificate is <br />obtained, fax or e-mail a copy to Kadeanne Linhares (klinhares@sjcehd.com) <br />All other food handling employees shall obtain the 3 year Food Handler Card within 30 days. <br />CALCODE DESCRIPTION: All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br />assigned duties. (113947) Food facilities that prepare, handle or serve non-prepackaged potentially hazardous food, shall have an <br />employee who has passed an approved food safety certification examination. (113947-113947.1) Any food handler hired after June 1, <br />2011 shall obtain a Food Handler Card within 30 days (113948). <br />#21 Hot and Cold Potable Water Not Available <br />OBSERVATIONS: The hot water at the 3 comp sink is 115F. Increase hot water temp to 120F or above. Correct prior to <br />operation of vehicle. <br />CALCODE DESCRIPTION: An adequate, protected, pressurized, potable supply of hot water and cold water shall be provided at all times. <br />(113953(c), 114099.2(b) 114101(a), 114189, 114192, 114192.1, 114195) <br />#64 Lack of Proper Owner Identification <br />OBSERVATIONS: The vehicle has provisional signage (Name, city, state and zip code). <br />Per owner, the truck is scheduled to be wrapped next week. <br />Provide the name of the vehicle in 3" lettering (minimum height).. on both sides of the vehicle <br />The owner name, commissary city, state and zip code shall be in 1" lettering (minimum height)...on both sides of the vehicle <br />Provide a photo of the truck once the wrap is complete (klinhares@sjcehd.com). <br />CALCODE DESCRIPTION: 1. The business name or the name of the operator, city state and ZIP code, and the name of the petmittee if <br />different from the business name is not clearly visible on the customer side of the mobile food facility. [§114299(a)] 2. Business or <br />operator name is not at least 3 inches high and address is not one inch high. [§114299(b)] 3. Sign is not in contrasting color with the <br />vehicle exterior. [§114299(b)] 4.
