WASTE DISCHARGE REQUIRENWS ORDER NO. 5-01-172 •
EAST-SIDE WINERY DBA OAK RIDGE VINEYARDS 3
SAN JOAQUIN COUNTY
15. Pomace and other grape wastes (skins, seeds, pulp, and stems) from the primary fermentation
process in the winery are sold commercially, are sent to vineyards (owned by cooperative
members), or are composted in the area of the wastewater ponds. The secondary fermentation
process produces lees consisting of yeasts and solids coagulated with bentonite and settled. After
filtration, these wastes are hauled to the wastewater ponds area. The filtrate is returned to the body
of the blend.
16. Stems are compacted and transported to the land next to the ponds. On some occasions the
Discharger has contracted to have the filter cake picked up by a commercial firm to extract
potassium bitartrate (cream of tartar). When commercial disposal is not available, the filter cake is
disposed of with the stems in the pond area. This Order requires changes in solid waste disposal
practices.
17. The winery is not expected to expand its operations in the future unless the economics of operating
the distillery change. In that case, additional stillage will be generated. Discharges are anticipated
to continue at approximately the current rate. Presently, flows are not metered; these waste
discharge requirements include a provision for installation of meters to determine the wastewater
flow.
18. As of June 2000, East-Side Winery has performed monthly monitoring of the effluent and the deep
pond to characterize the wastewater effluent. Based on eight sample events, the average
wastewater and pond water quality is as follows:
Analyte Wastewater Effluent Deep Pond Water
BOD 3,778 2,487
Suspended Solids 427 114
pH 4.3 4.7
Conductivity 13,875 730
Sulfate 2,341 110
Nitrate as Nitrogen 70 10
Total Dissolved Solids 3,897 1,003
Volatile Dissolved Solids 3,035 760
Dissolved Oxygen 2.6 0.5
19. Compound concentrations in winery wastewater are the highest during the crush season, typically
in the following ranges:
Compound Units Concentration Rangy
pH pH units 2.5 - 9.5
Dissolved Oxygen mg/l 0.5 - 8.5
Biochemical Oxygen Demand (BOD5)2 mg/l 500 - 12,000
Chemical Oxygen Demand (COD) mg/1 800- 15,000
Grease mg/l 5 - 30
Settleable Solids mg/l 25 - 100
Nonfilterable Residue mg/l 40- 800
Volatile Suspended Solids mg/1 150-700
