Observed the cover open for a prolonged period of <br /> time, preventing the prep cooler from maintaining a cold temperature.Advised to close cover lid when not in use or <br /> decrease the temperature on the prep cooler to ensure the cold holding temperature is maintained at 41 F or below. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F. Ensure all food stored inside any of the coolers contains a form of cover to avoid possible contamination. <br /> Correct today. <br /> CALCODE DESCRIPTION:All food shall be separated and protected from contamination.
