Employee stated that they also thaw overnight on prep sink. <br /> These are not approved thawing methods. Only thaw under refrigeration of 41 F or lower, cold running water not to exceed 2 <br /> hours, microwave, or part of cooking process. <br /> CALCODE DESCRIPTION:Food shall be thawed under refrigeration completely submerged under cold running water of sufficient velocity <br /> to flush loose particles in microwave oven during the cooking process.
