He was aware of complaint. He stated that 4 molcajetes were served at that table. It is a very popular <br />dish (usually several people share one dish). Manager stated that none one has been ill at the restaurant. <br />Food Process (I was able to observe cook): A cactus leaf is grilled with salt, At the same time a large piece of chicken, a <br />steak, chorizo, and shrimp are cooked on the grill. The molcajete is heated on the stove (upside down) and then flipped up <br />side. Salsa ranchera (cooked tomatoes, onions, garlic, chicken base, salt,cilantro) is poured into dish and chorizo, queso <br />fresco, mozarella cheese is placed into salsa. Dish is topped with chicken, steak, shrimp, fried bell pepper and onions. <br />Topped with fresh cilantro and jalapeno pepper. <br />Minor violations: See report <br />Observations: No evidence of vermin, employee health ok, general sanitation ok, rest room hand hand washing supplies, <br />dishwasher properly working, hot water available. <br />The person in charge is responsible for ensuring that the above mentioned facility is in compliance with all applicable sections of the California Health and <br />Safety Code.
