Went to the facility and spoke with the owner. I PEDRAZA <br /> informed her about the complaint. She was not aware of the complaint. She <br /> informed me that there had not been any employees ill during this complaint. No <br /> employees have traveled outside the country. Unknown to whether the employees <br /> work at another food facilities. <br /> Per owner the meats are cooked daily, the bean are cooked daily and rice are <br /> cooked daily. <br /> Chicken at 140 F, beans at 140 F, rice at 142 F, beef at 140 F, on steam table. <br /> The cold ingredients are maintained on the preparation cooler, currently at 43 F. <br /> This will be noted to be corrected to maintain at 41 F or below. <br /> All ingredients are kept in the walk in cooler, currently at 45 F or below.
