All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #7 Hot and Cold Holding Temperatures MAJOR <br />OBSERVATIONS: 4 door reach-in with prep top is at 66F-62F. <br />Foods in this unit are <br />Large bag of shredded cheese 55F <br />sour cream 65F <br />shredded cheese 53F-57F <br />Foods on prep top are <br />queso fresco 51F <br />cojita cheese 52F <br />pico 43F <br />All foods that are potentially hazardous and 50F and above are not to be sold/give to the Public. <br />Do not use this unit for the storage of potentially hazardous foods until the temperature is 41F or below AND a re-inspection <br />has occurred. <br />Foods that are potentially hazardous and 50F and above were discarded during inspection. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F.
