Per manager the walk-in went off in the morning and Jergens is supposed to <br /> service it today. The ground meat in the walk-in was 55 F and the beef patties were not cool to the touch,these items were <br /> discarded. Let manager know to check the temperature using the probe thermometer of PHFs that are not cold to the touch <br /> and to discard PHFs that are above 50 F and otherwise relocate the PHFs that are below 50 F to other working refrigeration <br /> units. Provide 41 F or below prior to storing any potentially hazardous food items inside the walk-in cooler. Corrected on site, <br /> employees were discarding PHFs and relocating the other PHFs from the walk-in to other units. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F.
