Let manager know that if the cooked noodles will not be kept <br /> above 135 F or below 41 F then they may be kept for a max of 4 hours after cooking and record or a time log must be kept. <br /> After the 4 hours the food must discarded. Cover food items to protect from <br /> contamination. Corrected on site. <br /> Observed ice scoop stored in ice and cups used to scoop ice out of ice machine. Store ice scoop in a cleanable container <br /> when not in use and use ice scoop or scoop with handle to scoop ice out of ice machine to prevent contamination. Corrected <br /> on site, ice scoop was placed in container. <br /> Observed debris inside ice machine. Clean today and maintain clean. <br /> Observed noodles stored in black bag inside plastic container near cook line and meat stored in white plastic bags in walk-in <br /> freezer.
