SAN O U I Environmental Health Department <br /> Time In: 9:40 am <br /> Time Out: 10:00 am <br /> COMPLAINT INSPECTION REPORT <br /> Name of Facility: PANERA BREAD#1825 Date: 10/20/2022 <br /> Address: 1355 E Yosemite AVE, MANTECA 95336 <br /> Owner/Operator: PANERA LLC Telephone: (209)647-7018 <br /> Program Element: 1600- FOOD PROGRAM Complaint#: C00055305 <br /> Responsible Party Contact: <br /> DESCRIPTION OF COMPLAINT ALLEGATIONS <br /> The San Joaquin County Environmental Health Department received the following complaint: <br /> COMPLAINANT ALLEGES AT THE END OF THE NIGHT,THE SOUPS ARE NOT BEING STORED IN THE <br /> REFRIGERATOR. INSTEAD, THEY ARE BEING LEFT OVER ICE IN THE THERMALIZER. TEMPS REACH OVER 60 <br /> DEGREES BY EARLY MORNING BEFORE THE STORE OPENS AND THEY USE THE SOUP AGAIN. <br /> VIOLATIONS AND CORRECTIVE ACTIONS <br /> Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br /> 113700.All violations must be corrected within specified timeframe. Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> OVERALL INSPECTION NOTES AND COMMENTS <br /> FOOD ITEM--LOCATION--TEMP°F--COMMENTS <br /> No Temperature Data Collected <br /> COMMENTS AND OBSERVATIONS <br /> Complaint inspection. <br /> As per Store Manager, she is aware of the complaint. Corrective measures had been taken (soup was discarded). <br /> All soup items received cooked and frozen, stored in the walk in freezer. Frozen packs are pulled to be reheated at 165F and <br /> above. Reheated soup is then held on the hot hold unit and any left over are kept in ice bath to cool then stored in the walk in <br /> cooler 41 F. <br /> During my inspection,thermalizer(reheating unit)water is at 185F.
