All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #14 Food Contact Surfaces Sanitized or Warewashing Sanitization <br />OBSERVATIONS: The chlorine sanitizing solution in the three compartment sink was 50 PPM concentration of chlorine. <br />Provide chlorine concentration between 100 - 200 Parts Per Million (PPM) for proper sanitation of all food preparation and <br />contact surfaces. Correct today. This was corrected on site and retested. <br />CALCODE DESCRIPTION: All food contact surfaces of utensils and equipment shall be clean and sanitized. (113984(e), 114097, <br />114099.1, 114099.4, 114099.6, 114101 (b-d), 114105, 114109, 114111, 114113, 114115 (a, b, d), 114117, 114125(b), 114135, 114141) <br /> #39 Thermometers Provided/Accurate/Easily Visible <br />OBSERVATIONS: The one door True display cooler was lacking a thermometer. Provide a thermometer for the cooler and <br />place in an easily visible location inside. Correct within 14 days. <br />CALCODE DESCRIPTION: An accurate easily readable metal probe thermometer suitable for measuring temperature of food shall be <br />available to the food handler. A thermometer +/- 2 #F shall be provided for each hot and cold holding unit of potentially hazardous foods <br />and high temperature warewashing machines. (114157, 114159) <br /> #40 Proper Use and Storage of Wiping Cloths <br />OBSERVATIONS: Observed wiping cloths on the counters. Keep wiping cloths that may come into contact with food inside <br />a bucket containing sanitizing solution when not in use. Correct today. <br />CALCODE DESCRIPTION: Wiping cloths used to wipe service counters, scales or other surfaces that may come into contact with food <br />shall be used only once unless kept in clean water with sanitizer. (114135, 114185.1 114185.3 (d-e)) <br /> #44 Premises: Clean/Litter Free; Vermin-Proof <br />OBSERVATIONS: Observed both service windows open for the entire duration of the inspection. The self-closing function <br />was turned off for the service windows. Keep windows and doors closed to keep food and food-contact surfaces vermin <br />proof. Correct today. <br />CALCODE DESCRIPTION: The premises of each food facility shall be kept clean and free of litter and rubbish all clean and soiled linen <br />shall be properly stored non-food items shall be stored and displayed separate from food and food-contact surfaces the facility shall be <br />kept vermin proof.
