All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #1 Demonstration of Knowledge <br />OBSERVATIONS: Repeat Violation: A current food manager or food handler certificates were not available during the <br />inspection. Provide a copy of the 5-year food manager's certificate and a copy of the food handler certificate once obtained <br />to cmuro@sjgov.org. Correct within 21 days. <br />CALCODE DESCRIPTION: All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br />assigned duties. (113947) Food facilities that prepare, handle or serve non-prepackaged potentially hazardous food, shall have an <br />employee who has passed an approved food safety certification examination. (113947-113947.1) Any food handler hired after June 1, <br />2011 shall obtain a Food Handler Card within 30 days (113948). <br /> #23 Rodents, Insects or Animals Inside Facility <br />OBSERVATIONS: Observed a live cockroach inside the mop sink. Increase pest control as needed. Use approved pest <br />control methods for food service facilities. Correct today. <br />CALCODE DESCRIPTION: Each food facility shall be kept free of vermin: rodents (rats, mice), cockroaches, flies.( 114259.1, 114259.4, <br />114259.5) <br /> #29 Toxic Substances Properly Identified/Stored/Used <br />OBSERVATIONS: Observed Real Kill Ant and Roach Killer aerosol cans stored on a shelf next to the reach-in freezer. <br />Store chemicals away from food storage and prep areas. <br />Per employee, Real Kill is used as pest control. Only insecticides necessary and specifically approved for use in a food <br />facility may be used in accordance with the manufacturer’s instructions. <br />CALCODE DESCRIPTION: All poisonous substances, detergents, bleaches, and cleaning compounds shall be stored separate from food, <br />utensils, packing material and food-contact surfaces.
