THERE ARE 4 RESIDENTS WHO BECAME SYMPTOMATIC <br />YESTERDAY 4/21/22. THEY REPORT HAVING ATE THE SAME DINNER THE NIGHT BEFORE. <br />VIOLATIONS AND CORRECTIVE ACTIONS <br />Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br />113700. All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodbome illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br />OVERALL INSPECTION NOTES AND COMMENTS <br />FOOD ITEM -- LOCATION --TEMP ° F -- COMMENTS <br />2 door upright Blue Air refrigerator -- 41.00° F hand sink-- kitchen -- 115.00° F <br />hand sink -- restroom 102.00° F Hotpoint residential refrigerator -- 39.00° F <br />COMMENTS AND OBSERVATIONS <br />I went to the facility and spoke with the Administrator who said that there have been no ill kitchen staff for the last two weeks. <br />There is no outside employment of kitchen staff at other residential care facilities and/or restaurants. <br />The dinner meal that was consumed on 4/20/2022 was lentil soup, deli meat sandwich, broccoli salad and fruit cup. <br />Lentils that are used for the lentil soup come to the facility and are stored in the dry storage room and boiled with broth when <br />prepared. <br />Deli meats are stored in the 2 door upright Blue air refrigerator (40F) <br />Broccoli is stored in the reach-in freezer and is rinsed with hot water and prepared with mayonnaise, bacon and raisins for the <br />broccoli salad. <br />Fruit comes to the facility canned. <br />Hand was sinks are stocked with soap and paper towels. <br />Dishwasher sanitizer is at 50ppm (chlorine)The following recommendations are: <br />Hot water at the 2 compartment sink is at 115F. <br />Provide hot and cold water at this sink with hot water at a minimum of 120F. <br />I observed a frozen bag of broccoli in the reach-in freezer that states on the package "Reheat to 165F" <br />Recommend reheating according to package instructions. <br />The person in charge is responsible for ensuring that the above mentioned facility is in compliance with all applicable sections of the California Health and <br />Safety Code.
