COMPLAINANT OPENED FOOD IMMEDIATELY <br />UPON RECEIVING ORDER. COMPLAINANT GAVE A FEW SPOONFULS OF BROTH TO THEIR THREE YEAR OLD. <br />COMPLAINANT ALLEGES THE BROTH SMELLED HORRIBLE AS IF IT WERE SPOILED. <br />VIOLATIONS AND CORRECTIVE ACTIONS <br />Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br />113700. All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodbome illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br />OVERALL INSPECTION NOTES AND COMMENTS <br />FOOD ITEM -- LOCATION -- TEMP ° F --COMMENTS <br />No Temperature Data Collected <br />COMMENTS AND OBSERVATIONS <br />Complaint inspection. <br />As per operator, he is not aware of the complaint. Broth is prepared on site from different kind of meat ( chicken, beef bones <br />and veggies). <br />Beef bones are received frozen, kept in the walk in freezer to be directly placed on a specific cooking equipment to be slowly <br />cooked over long time. Broth, when prepared, is stored in containers, held on ice bath with continuous stirring then stored in <br />walk in freezer afterward. Frozen broth is pulled from the freezer to be reheated on the stove at boiling temp ( 212F). <br />Reheated broth is kept on the stove on low heat ( hot hold) till served. Chicken is received frozen, stored in walk in freezer <br />then pulled to the walk in cooler(41F) to be thawed overnight for next day preparation. Thawed chicken is boiled on the stove <br />then vegetables and seasoning are added to continue boiling at 212F. Cooked broth is then kept on the stove at low heat to <br />be held at 135F or more till serving.During inspection, bone broth, during cooking process, is at temp 209F, reheated broth on <br />the stove, is at 187F, 175F and 201F. Reheated broth ( beef bone, chicken and veggies) on site, don't have any bad spoiled <br />smell. <br />The person in charge is responsible for ensuring that the above mentioned facility is in compliance with all applicable sections of the California Health and <br />Safety Code.
