Maintain PHFs at 41 F or below unless actively prepping. Corrected on site, cheese sauce bag was <br /> discarded. <br /> The shredded cheddar cheese in the prep table at the front was 49 F. Provide 41 F or below. Corrected on site,the cheese <br /> was discarded. <br /> The chocolate mix at the drive thru soft serve machine was 46 F. Provide 41 F or below today. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F. (113996, 113998, <br /> 114037, 114343(a)) <br /> #8 Use of Time as a Public Health Control <br /> OBSERVATIONS:Time was not recorded on the sliced cheese containers at the prep table,the sliced cheese has an 8 hr <br /> max hold time. Maintain records/documentation when time is used as the public health control and do not exceed max hold <br /> time. Corrected on site. <br /> CALCODE DESCRIPTION:When time only,rather than time and temperature is used as a public health control,records and <br /> documentation must be maintained(114000) <br /> #21 Hot and Cold Potable Water Not Available <br /> OBSERVATIONS:The water in the wash compartment of the 3 comp sink was 90 F. Provide 100 F minimum washing <br /> solution when warewashing. Correct immediately. <br /> The water at the women's restroom nonadjustable hand sink was 97 F.
