All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #1 Demonstration of Knowledge <br />OBSERVATIONS: Lacking food manager certificate. Provide food manager certificate within 2 weeks and email certificate <br />to dafonskaia@sjgov.org once received. <br />CALCODE DESCRIPTION: All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br />assigned duties. (113947) Food facilities that prepare, handle or serve non-prepackaged potentially hazardous food, shall have an <br />employee who has passed an approved food safety certification examination. (113947-113947.1) Any food handler hired after June 1, <br />2011 shall obtain a Food Handler Card within 30 days (113948). <br /> #8 Use of Time as a Public Health Control <br />OBSERVATIONS: Records not being maintained for self-serve pizza for lunch buffet. Per employee the pizza is there for <br />only the lunch buffet which is 11 AM - 2 PM and remaining pizzas are discarded. No self-serve pizza was observed at front <br />counter during the inspection. When time is used as the public health control then records/documentation must be <br />maintained and a max 4 hour hold time can not be exceeded. Remaining food items after 4 hour hold time must be <br />discarded. Correct today and email evidence of correction to dafonskaia@sjgov.org within 1 week. <br />CALCODE DESCRIPTION: When time only, rather than time and temperature is used as a public health control, records and <br />documentation must be maintained (114000) <br /> #35 Equipment/Utensils Approved and in Good Repair <br />OBSERVATIONS: Observed two 20 lbs and one 50 lb unsecured CO2 cylinders. Keep pressurized cylinders secured to a <br />rigid structure at all times. Correct today. Email evidence of correction to dafonskaia@sjgov.org within 1 week. <br />Observed dust/debris build up inside exhaust hood and on exhaust hood filters. Clean within 1 week and maintain clean. <br />Email evidence of correction to dafonskaia@sjgov.org within 1 week. <br />CALCODE DESCRIPTION: All utensils and equipment shall be fully operative and in good repair. (114175). All utensils and equipment <br />shall be approved, installed properly, and meet applicable standards.
