All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #7 Hot and Cold Holding Temperatures <br />OBSERVATIONS: The open case cooler with cheese, eggs, deli meats was observed at 48F. Adjust the unit so that food is <br />maintained at 41F or below. Correct today. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F. (113996, 113998, <br />114037, 114343(a)) <br /> #21 Hot and Cold Potable Water Not Available <br />OBSERVATIONS: The hot water at the produce prep sink was observed at 115F. Adjust hot water heater so that hot water <br />is provided at 120F or above. Correct today. <br />CALCODE DESCRIPTION: An adequate, protected, pressurized, potable supply of hot water and cold water shall be provided at all times. <br />(113953(c), 114099.2(b) 114101(a), 114189, 114192, 114192.1, 114195) <br /> #27 Food Protected from Contamination <br />OBSERVATIONS: Observed towel liners under meat in the open meat cooler and the deli case in the meat department. <br />Paper liners are also being used on shelves below cutting tables in the meat department. Liners and towels were observed <br />with blood residue. Remove towels and paper liners as they are not cleanable surfaces to protect food prep and storage <br />areas from contamination. Correct today. (REPEAT) <br />Fly paper with a lot of dead flies was observed hanging over the sink in the meat department. Move fly paper to an area that <br />is away from food storage and prep areas. Correct today. <br />CALCODE DESCRIPTION: All food shall be separated and protected from contamination.
