Environmental Health Department <br />Telephone: (208) 377-0110 Owner/Operator: WINCO FOODS <br />Inspection Type: Routine <br />Address: 2850 PAVILION PKWY, TRACY 95304 <br />Date: 05/20/2025Name of Facility:WINCO FOODS #103 <br />Reinspection on or after: 06/03/2025 <br />Food Program Official Inspection Report <br />Program Element: 1619 - RETAIL MKT >1000 SQ FT (=/>2 DEPTS) <br />Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br />113700. All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate <br />closure of the food facility. <br />VIOLATIONS AND CORRECTIVE ACTIONS <br /> #21 Hot and Cold Potable Water Not Available <br />OBSERVATIONS: MAJOR: The hot water at the 3-comp sinks, food prep sinks, and mop sink is less than 100F throughout the <br />facility. (Production room did get to 100F) <br /> Immediately increase the temperature of the hot water at the 3-comp sinks, food prep sinks and mop sink to 120F minimum. <br />ASM called someone out to expedite service for the hot water. In the mean time all warewashing shall occur at the Bakery <br />dishmachine. <br />Provide proof of correction by 2 weeks or a chargeable re-inspection will occur. <br />MINOR: The hot water at the hand sinks is less than 100F. Increase the temperature of the hot water at the hand sinks to <br />100F. <br />***At the end of the inspection, employee from Deli showed ASM and inspector a video that the hot water a the 3-comp in the <br />deli had risen to 112F. <br />CALCODE DESCRIPTION: An adequate, protected, pressurized, potable supply of hot water and cold water shall be provided at all <br />times. (113953(c), 114099.2(b) 114101(a), 114189, 114192, 114192.1, 114195) <br />This is (Major) Violation. <br />MAJOR <br /> #7 Hot and Cold Holding Temperatures <br />OBSERVATIONS: Some of the foods at the deli case are warmer than 41F (corned beef 49F, roast beef, 48F, turkey 44F, <br />sliced chicken, potato salad and macaroni salad 43F). The bagged vegetables (air) are 48F and the bell pepper (green - product <br />temp) is 46F. Maintain cold food at 41F or below. Correct today. <br />Per ASM, no refrigeration alarms were noted at time of inspection. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F.
