Mechanical exhaust ventilation equipment shall be provided over all cooking equipment <br />as required to effectively remove cooking odors, smoke, steam, grease, heat, and <br />vapors. All mechanical exhaust ventilation equipment shall be installed and maintained <br />in accordance with the California Mechanical Code. Makeup air shall be provided the <br />rate of that exhausted [CRFC §114149.1] <br />3. Food service openings: <br />a. Shall be no more than 216 square inches and no less than 18 inches apart. <br />b. Shall be covered with solid material or screen. If screen is used it must be at least <br />16-mesh per inch.(CRFC Section 114259.2) <br />4. Light bulbs and tubes shall be covered and completely enclosed in plastic safety <br />shields or the equivalent. (CRFC Section 114323) <br />1. The business name of operator, city, state, ZIP code a name of the permit holder if <br />different from the name of food facility, shall be legible, clearly visible to consumers and <br />affixed on the consumer side of mobile food facility. <br />Business name shall be in letters at least 3 inches high. Letters and numbers for the <br />city, state, and ZIP code shall not be less than one inch high. <br />2.
