All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate <br />closure of the food facility. <br />VIOLATIONS AND CORRECTIVE ACTIONS <br /> #4 Employee Eating, Tasting, Drinking or Tobacco Use <br />OBSERVATIONS: Observed two employees eating in the kitchen at the prep table and near the cook's line. Employees shall <br />eat, drink, or use any form of tobacco only in designated areas where contamination of non-prepackaged food, clean <br />equipment, utensils, and linens, unwrapped single-use articles, or other items needing protection cannot result. Food shall be marked or a log shall <br />be kept when food is removed from temperature control and the four hour time limit has been reached. Correct today. <br />(REPEAT) <br />CALCODE DESCRIPTION: When time only, rather than time and temperature is used as a public health control, records and <br />documentation must be maintained (114000) <br />This is (Minor - Food) Violation. <br /> #30 Food Storage/Display Properly Labeled <br />OBSERVATIONS: In the dry storage room a large container was observed with a hole in the lid and one dry storage container <br />was observed with an empty can for a lid. Ensure dry storage containers have tight-fitting lids with no holes. Correct today. <br />(REPEAT) <br />CALCODE DESCRIPTION: Food shall be stored in approved containers and labeled as to contents. Food shall be stored at least 6" <br />above the floor on approved shelving.
