COMPLAINT INSPECTION REPORT <br />Environmental Health Department <br />Name of Facility: TACOS EL PELON #4 (#4SF1086)Date: 07/09/2025 <br />Address: 2900 E HARDING , STOCKTON 95215 <br />Owner/Operator: SANTILLAN AGUIRRE, VERONICA Telephone: (209) 649-5028 <br />Program Element: 1600 - FOOD PROGRAM Complaint #: CO2500381 <br />Responsible Party Contact: <br />DESCRIPTION OF COMPLAINT ALLEGATIONS <br />The San Joaquin County Environmental Health Department received the following complaint: <br />TRUCK IS PARKED IN THE MOBIL GAS STATION PARKING LOT LOCATED AT: 3440 E MAIN ST, STOCKTON, CA 95205. <br /> <br />ON SATURDAY, 6-28-25, AT APPROXIMATELY 9:30PM, (C) WENT TO TACO TRUCK AND ORDERED 4 CHICKEN TACOS <br />AND 1 TRIPA TACO. TACOS HAD GREEN SALSA, SOUR CREAM, CILANTRO, AND CHEESE - WITH CUCUMBERS, <br />RADISHES, AND A JALAPENO ON THE SIDE. LATER, AT APPROX. 11:30PM THAT EVENING, (C) STARTED <br />EXPERIENCING STOMACH CRAMPS. AT 5:30AM THE NEXT MORNING (6-29-25), (C) STARTED VOMITTING. AT 9:30AM, <br />(C) WENT TO ER AT SAN JOAQUIN GENERAL HOSPITAL, AND STAYED UNTIL MON, 6-30-25, DISCAHRGED AROUND <br />NOON. (C) HAS EXISTING STOMACH ISSUES AND HOSPITAL TOLD (C) THE FOOD JUST IRRITATED THEIR EXISTING <br />STOMACH ISSUES. NO DIAGNOSIS. <br />VIOLATIONS AND CORRECTIVE ACTIONS <br />Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br />113700. All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate <br />closure of the food facility. <br /> #8 Use of Time as a Public Health Control <br />OBSERVATIONS: Time control logs were lacking for the tripe . Tripe was observed at 99 F. Food shall be marked or a log shall <br />be kept when food is removed from temperature control and the four hour time limit has been reached OR food shall be <br />maintained at 41 F or lower or 135 F or higher. This was corrected on site. <br />CALCODE DESCRIPTION: When time only, rather than time and temperature is used as a public health control, records and <br />documentation must be maintained (114000) <br />Major <br /> #6 Handwashing Facilities Supplied and Accessible <br />OBSERVATIONS: The hand sink was blocked by to go containers. Maintain hand sink accessible at all times for proper hand <br />washing. This was corrected on site. <br />CALCODE DESCRIPTION: Handwashing soap and towels or drying device shall be provided in dispensers dispensers shall be <br />maintained in good repair.
