Violations that are classified as "MAJOR" pose an immediate threat to public health and have the <br />potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of the food facility. <br />#7 Hot and Cold Holding Temperatures <br />OBSERVATIONS: The steam table’s temperature was not demonstrated during the inspection . Ensure the steam table <br />temperature is set to maintain hot food items at 135 F minimum. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F. (113996, 113998, <br />114037, 114343(a)) <br />#14 Food Contact Surfaces Sanitized or Warewashing Sanitization <br />OBSERVATIONS: Sanitizing test strips were lacking at the facility. Obtain sanitizing test strips to ensure the sanitizing solution <br />has a concentration of chlorine 100 - 200 Parts Per Million (PPM) for the warewashing/sanitizing of all utensils, equipment, and <br />food contact surfaces. Correct within seven days. <br />CALCODE DESCRIPTION: All food contact surfaces of utensils and equipment shall be clean and sanitized. Provide a curbed cleaning facility or janitor sink equipped with a drain <br />conveniently located for the cleaning of mops or similar wet floor cleaning tools and for the disposal of mop water and similar <br />liquid waste. Correct today. <br />CALCODE DESCRIPTION: All liquid waste must drain to an approved fully functioning sewage disposal system. (114197) <br />#36 Equipment/Utensils/Linens: Proper Storage / Use <br />OBSERVATIONS: Observed the front bar countertop being used for storage. All food, utensils, and equipment shall be stored <br />and/or displayed so as to be protected from contamination. All non-food related items and non-functional equipment shall be <br />removed from premises. Provide durable shelving which holds foods, utensils, and equipment a minimum of six (6) inches above <br />the floor with finishes that are nonabsorbent, smooth and cleanable [CRFC §114047]. <br />CALCODE DESCRIPTION: All clean and soiled linen shall be properly stored non-food items shall be stored and displayed separate <br />from food and food-contact surfaces.
