Repair line, immediately. <br />Exterior and interior of meat/food coolers and walk in cooler are not clean. Interior/exterior of food coolers at customer area <br />have debris. Interior of large freezer is not clean. Detail clean all coolers and freezers by 5 days and as needed. <br />Metal cabinet for the storage of utensils is not clean. Clean, weekly. <br />Food bins in kitchen and tray with spices are not clean. Clean and sanitize more often. Correct by 2 days. <br />Knife holder is not clean. Replace by 1 week. <br />CALCODE DESCRIPTION: Exhaust hoods shall be provided to remove toxic gases, heat, grease, vapors and smoke and be approved by <br />the local building department. Canopy -type hoods shall extend 6" beyond all cooking equipment. All areas shall have sufficient ventilation <br />to facilitate proper food storage. Toilet rooms shall be vented to the outside air by a screened openable window, an air shaft, or a <br />light -switch activated exhaust fan, consistent with local building codes.
