Adjust both to <br /> 45 F or below today. <br /> The 2 dr self serve cake freezer is at 52 F. There are prepacked ready to eat sheet cakes and ice cream cakes. The ice <br /> cream cakes were at 38 F and fully thawed. The sheet cakes are at 52 F. Store director states that the sheet cakes can <br /> last 2 weeks in the cooler after being thawed. The ice cream cakes were discarded and the sheet cakes were placed back <br /> into the cooler. Repair the freezer to proper working order. <br /> The sliced apples and cut kale produce case is at 46 F. Adjust to 41 F or below today. <br /> Facility makes Boston cream cakes on site and they are being sold at room temperature. Store director states the cakes <br /> are discarded 7 days after the date of manufacturing. The manufacturer's instructions for the cream's shelf life states to <br /> discard after 5 days if left out at room temp(80 F or less). Cakes that were left out past 5 days were discarded. Always <br /> follow ingredient manufacturer's holding instructions. <br /> Some of the frozen foods(pizza, burritos, peas, tator totes) have thawed partially. Discard all foods that have thawed fully. <br /> Repair the freezer to proper working condition today. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41145'F or at or above 135°F.
