CHILD NOTICED THEIR FISH WAS GRAY AND MUSHY. COMPLAINANT HAD CONSUMED TWO <br /> PIECES OF FISH THEN BROKE OFF THE THIRD PIECE TO GIVE TO CHILD AND NOTICED A PARASITE IN THE FISH. <br /> PLEASE CALL COMPLAINANT WITH FINDINGS. <br /> VIOLATIONS AND CORRECTIVE ACTIONS <br /> Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br /> 113700.All violations must be corrected within specified timeframe. Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> OVERALL INSPECTION NOTES AND COMMENTS <br /> FOOD ITEM--LOCATION--TEMP°F--COMMENTS <br /> No Temperature Data Collected <br /> NOTES <br /> Manager was aware of the complaint. Complainant came back to the store after 2 days, showed the manager the parasite in <br /> the fried fish. Manager took corrective measures(money refund, discarding the remaining of the frozen fish and informed the <br /> owner). <br /> The storage and the prep procedures: <br /> As per manager,the frozen Cajun fish bags are stored in the walk in freezer.When there is an order,they transfer bags to the <br /> 1 door freezer, close to the frying station.After frying for 4 minutes,they place the fried fish in the hot hold for 30 min then <br /> discard if any left. <br /> During my visit,the 30 minutes hot hold timer was not on . <br /> I asked the manager to pick 2 pieces from different bags and fry them. By checking the 2 fried pieces, neither parasites were <br /> observed nor mushy texture.
