Observed food handler disposed breads <br /> CALCODE DESCRIPTION:Employees are required to wash their hands:before beginning work before handling food/equipment/ <br /> utensils as often as necessary, during food preparation, to remove soil and contamination when switching from working with raw to ready <br /> to eat foods,after touching body parts after using toilet room or any time when contamination may occur. (113952, 113953.3, 113953.4, <br /> 113961, 113968, 113973(b-0) <br /> #7 Hot and Cold Holding Temperatures MAJOR <br /> OBSERVATIONS:Potentially hazardous food (PHF)at above 41 F (see measurement list)some above 50 F in both left <br /> and right(west and east)2 drawer/1 door cooler/prep table(no time label), and tuna and eggs above 50 F(containers <br /> labeled Aug 4). Staff stated the steaks and patties were brought out around 9am, but not sure about the deshelled hard <br /> boiled eggs and tuna. Immediately provide 41 F or below, and cease using these two equipment for temperature control <br /> until it can be repaired to provide this temperature. Observed disposal of the eggs,tuna, and harsh brown, and the burger <br /> patties,steaks, and cooked sausage moved to Walk In. This is a repeat violation. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F. (113996, 113998, <br /> 114037, 114343(a)) <br /> #13 Food Contamination and Adulteration MAJOR <br /> OBSERVATIONS:Observed food handler pressed right hand into garbage can to compressed the content,then <br /> immediately pulled out 4 pieces of sliced bread for further food prep without washing hands in between. Immediately cease <br /> handling food without washing hands between task. Observed food handler disposed breads and washed hands. <br /> Observed cook reaching into a container of pickled jalapenos with bare hands for cooking omelet, but the jalapenos there is <br /> also used as ready-to-eat items. Immediately cease contaminating ready to eat foods, or any food. Observed jalapenos <br /> disposed. Recommend using tongs or utensils to pick up food item for either cooking or ready to eat items. <br /> CALCODE DESCRIPTION:Any food is adulterated if it bears or contains any poisonous or deleterious substance that may render it <br /> impure or injurious to health.
