AT AROUND 1:40PM, COMPLAINANT FELT ILL WITH CHILLS AND <br /> STOMACH CRAMPS AND HAS BEEN GOING TO THE RESTROOM NON-STOP(DIARRHEA). PLEASE SEND <br /> INSPECTOR AS SOON AS POSSIBLE. <br /> VIOLATIONS AND CORRECTIVE ACTIONS <br /> Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br /> 113700.All violations must be corrected within specified timeframe. No employees working in day care facility or food facility. 3 employees got their food <br /> handler training. Staff eats from the food eaten by the complainant. Chlorine test strips are available. Sanitizer bucket is set <br /> up with Chlorine 100 ppm. Probing thermometer is available and is used to check temp of cooked food on smoker and on hot <br /> hold. Employees are wearing gloves during food preparation and washing hands before handling food and between tasks. <br /> Hand wash station is fully supplied.All employees have valid food handler cards and the owner is in process of providing food <br /> safety certificate.Manager stated that they don't serve Macaroni salad, only potato salad and Cole slaw. I asked the process of <br /> preparing food from receiving till serving. For the potato salad,they boil the potatoes and eggs then peel potatoes and cut <br /> eggs, mix them with mayo, mustard, bacon and some spices then divide them in small containers then place them in <br /> cooler(41 F).
