COMPLAINANT <br /> ALLEGES SHE BECAME ILL FROM CONSUMING CHICKEN. <br /> VIOLATIONS AND CORRECTIVE ACTIONS <br /> Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br /> 113700.All violations must be corrected within specified timeframe. No employees working in day care facility or food facility. 3 employees got their food <br /> handler training. Staff eats from the food eaten by the complainant. Chlorine test strips are available. Sanitizer bucket is set <br /> up with Chlorine 100 ppm. Probing thermometer is available and is used to check temp of cooked food on smoker and on hot <br /> hold. Employees are wearing gloves during food preparation and washing hands before handling food and between tasks. <br /> Hand wash station is fully supplied. <br /> All employees have valid food handler cards and the owner is in process of providing food manager certificate. <br /> Whole chickens are received frozen, part put in freezer and part put in the cooler then cooked on the top shelf of the smoker <br /> for 2 hours then divided in 4 pieces and put on the steam table. Chicken on steam table at 167F.
