COMPLAINANT CONSUMED A LARGE PIECE OF CHICKEN <br /> PARMESAN, A SIDE SALAD AND BREAD WITH OLIVE OIL. COMPLAINANT ALLEGES THEY HAVE A SEVERE CASE <br /> OF A GASTROINTESTINAL VIRUS. COMPLAINANT ALLEGES THEY ARE STILL SICK AS OF TODAY, 2/22/2019. <br /> VIOLATIONS AND CORRECTIVE ACTIONS <br /> Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7, <br /> 113700.All violations must be corrected within specified timeframe. He stated that customer claimed to <br /> have gotten sick an hour and a half after they ate (he showed me the complaint). He stated that none of the cooks have been <br /> ill. <br /> Food process: Chicken parmesan comes with chicken breast. Chicken comes in frozen and thawed for 2-3 days in walk in <br /> cooler. Pieces are pounded very thin, covered with egg wash and then with bread crumbs. Cooked when order is placed. <br /> Bread crumbs come pre-made and stored at room temperature. Dish is served with pasta and red sauce. Side salad comes <br /> with romaine lettuce (from Salinas, CA), croutons (made on site with cubed bread and fresh parsley),pecarino cheese and <br /> pre-made Caesar dressing.
