A doorway a minimum of 32"X80" needs to be constructed to create a direct connection <br /> from the store to the utensil washing room. <br /> 2. The utensil washing room base coving needs to be replaced with smooth durable <br /> nonabsorbent material that has a % radius coving that extends up the wall at least 4 <br /> inches. <br /> 3. The mop sink needs to be a low profile type if left in the utensil washroom to prevent <br /> cross contamination. The existing shower in the restroom could be converted to a mop <br /> sink with hot/cold water if done correctly in lieu of the mop sink in the utensil washroom. <br /> 4. The restroom rubber base vinyl top is not acceptable and will require removing and <br /> creating a floor wall juncture % radius coving with appropriate material to extend up the <br /> wall 4" similar to item #2. <br /> 5. No dry storage is depicted. The room between the walk in coolers will need the slated <br /> wall material removed and replaced with smooth durable and light colored material. <br /> Adequate dry storage must be provided equivalent to 96 linear feet of 18 inch deep (144 <br /> sq ft) that is smooth, durable, nonabsorbent, and cleanable. <br /> 6. This facility must supply a commercial water heater that will meet the peak calculated <br /> hourly demand of 40 gallons per hour and a minimum 6kw. The water heater must have <br /> a recovery rate equal to or greater than the peak hourly demand at a 60 degree F rise. <br /> CURFFL 114095 <br /> - l - <br />
