Non-compliance may warrant immediate closure of <br />the food facility. <br /> #26 Approved Thawing Methods <br />OBSERVATIONS: Frozen egg white boxes were merged with room temp water in the 3 comp sink and have temp of 61F. <br />Discard immediately and follow the thawing technique as described below. Remove immediately. Corrected on site. <br />Dirty knife was placed by the grilling area. Wash, rinse and sanitize. Corrected on site. <br />CALCODE DESCRIPTION: All nonfood contact surfaces of utensils and equipment shall be clean. Place wipe cloths in the <br />sanitizing bucket when not in use. <br />CALCODE DESCRIPTION: Wiping cloths used to wipe service counters, scales or other surfaces that may come into contact with food <br />shall be used only once unless kept in clean water with sanitizer.
