All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #26 Approved Thawing Methods <br />OBSERVATIONS: Frozen egg white boxes were merged with room temp water in the 3 comp sink and have temp of 61F. <br />Discard immediately and follow the thawing technique as described below. Corrected on site. <br />CALCODE DESCRIPTION: Food shall be thawed under refrigeration completely submerged under cold running water of sufficient velocity <br />to flush loose particles in microwave oven during the cooking process. (114018, 114020, 114020.1) <br /> #27 Food Protected from Contamination <br />OBSERVATIONS: Egg butter for crepes was placed in containers on the floor at temp 52F for 50 min uncovered. Cover <br />immediately and place containers in the walk in cooler. Corrected on site. <br />CALCODE DESCRIPTION: All food shall be separated and protected from contamination. (113984 (a, b, c, d, f), 113986, 114060, <br />114067(a, d, e, j), 114069(a, b), 114077, 114089.1 (c), 114143 (c)) <br /> #33 Nonfood Contact Surfaces Clean <br />OBSERVATIONS: 3 spoons were placed in the hand sink by the washing area. Remove immediately. Corrected on site. <br />Dirty knife was placed by the grilling area. Wash, rinse and sanitize. Corrected on site. <br />CALCODE DESCRIPTION: All nonfood contact surfaces of utensils and equipment shall be clean. (114115 (c)) <br /> #40 Proper Use and Storage of Wiping Cloths <br />OBSERVATIONS: 2 wipe cloths were placed at grilling side, not in the sanitizing solutions. Place wipe cloths in the <br />sanitizing bucket when not in use. <br />CALCODE DESCRIPTION: Wiping cloths used to wipe service counters, scales or other surfaces that may come into contact with food <br />shall be used only once unless kept in clean water with sanitizer.
