Use 100ppm chlorine or 200ppm quat at 3 <br /> comp sink until the dishwasher is sanitizing at 50ppm chlorine. <br /> CALCODE DESCRIPTION:All food contact surfaces of utensils and equipment shall be clean and sanitized.
