Violations that are classified as"MAJOR"pose an immediate threat to public health <br /> and have the potential to cause foodborne illness.All major violations must be corrected immediately.Non-compliance may warrant immediate closure of <br /> the food facility. <br /> #7 Hot and Cold Holding Temperatures MAJOR <br /> OBSERVATIONS:The oven roasted chicken breast,the veggie patties, and the rotisserie chicken is 60-63F. Per Manager, <br /> this side of the prep unit was worked on recently.All food above 50F was discarded on site and new food put out on the <br /> prep line.4 hour stickers were placed on food.Any food not used within 4 hours shall be discarded. <br /> Some other food on the other side of the prep line is above 41 F(turkey, roast beef, cheese, steak, etc.-see temperatures <br /> at measured observations section). Maintain cold food at 41 F or below. Correct today. <br /> CALCODE DESCRIPTION:Potentially hazardous foods shall be held at or below 41/45°F or at or above 135°F. (113996, 113998, <br /> 114037, 114343(a)) <br /> #1 Demonstration of Knowledge <br /> OBSERVATIONS:A copy of the 5 year Food Safety Certificate is not on site. Provide a copy of the 5 year Food Safety <br /> Certificate within 60 days. Fax or e-mail to Kadeanne Linhares(klinhares@sjcehd.com). <br /> An employee working today does not have a copy of her Food Handler Card (states that it is at another store).All employees <br /> shall maintain a copy of their FHC on site(at multiple locations if working in multiple locations). Correct by 30 days. <br /> CALCODE DESCRIPTION:All food employees shall have adequate knowledge of and be trained in food safety as it relates to their <br /> assigned duties. (113947-113947.1)Any food handler hired after June 1, <br /> 2011 shall obtain a Food Handler Card within 30 days(113948). <br /> #43 Toilet Facilites Clean/Supplied/Maintained <br /> OBSERVATIONS:The toilet in the employee restroom has a broken tank lid and will not flush when the handle is pressed <br /> (toilet must be fluc=shed by raising flapper from inside the toilet tank). Replace tank lid and repair toilet of flush properly. <br /> Correct ASAP. <br /> CALCODE DESCRIPTION: Toilet facilities shall be maintained clean, sanitary and in good repair. Toilet rooms shall be separated by a <br /> well-fitting self-closing door. Toilet tissue shall be provided in a permanently installed dispenser at each toilet. The number of toilet <br /> facilities shall be in accordance with local building and plumbing ordinances. Toilet facilities shall be provided for patrons:in <br /> establishments with more than 20,000 sq ft. establishments offering on-site liquor consumption.
