PLEASE SEND INSPECTOR AS SOON AS POSSIBLE. <br />DESCRIPTION OF COMPLAINT ALLEGATIONS <br />Environmental Health Department <br />VIOLATIONS AND CORRECTIVE ACTIONS <br />Items listed on this report as violations do not meet the requirements set forth in the California Health and Safety Code commencing with section 7; <br />113700. All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #7 Hot and Cold Holding Temperatures <br />OBSERVATIONS: The walk in cooler was at 45F. Lower to 41F or below. Correct today. <br />Some of the hot hold foods were below 135F. Maintain 135F or above. I spoke with owner and he was not aware of the complaint. <br />Temperatures at the deli and carniceria were taken. Some of the hot foods in the deli were less than 135F. Owner increased <br />the heat in the hot case from 3 to 5 while on site. The temperatures of the meats in the carniceria were 41F or below. The <br />walk in cooler was at 45F; however, no major violations were observed. <br />Meats come from Cargill, Pacific Agri, and Zarate's Foods.
