She said that the complainant is a former employee who asked the <br /> owner to fire him to be able to apply for unemployment but he got denied then he got upset and started to post the same <br /> exact complaint and bad reviews on yelp. I inspected the hood filter, no grease accumulation and they clean grease trapper <br /> every Monday. I inspected the walk in cooler, raw meat is stored at bottom shelves while the cooked food containers are <br /> stored on higher shelves. I inspected all ceilings, no leakage or peeled paints observed. I observed the cook washing hands <br /> between tasks. I asked the cook about the thawing technique, he confirmed that frozen meat is pulled from freezer at night to <br /> defrost in the walk in cooler. I asked about the cooling technique,they divide the food in small shallow containers then leave <br /> them to cool down then put them in the walk in cooler. During my visit, I didn't observe any preparation of raw meat on the <br /> same cuttingboard to prepare or place cooked food ( no cross contamination).
