All violations must be corrected within specified timeframe. Violations that are classified as "MAJOR" pose an immediate threat to public health <br />and have the potential to cause foodborne illness. All major violations must be corrected immediately. Non-compliance may warrant immediate closure of <br />the food facility. <br /> #7 Hot and Cold Holding Temperatures MAJOR <br />OBSERVATIONS: Facility is making jerky on site with a dehydrator machine. Facility does not have a permit to make jerky. <br />Discontinue today and obtain a permit from CDFA. David Schurr: david.shurr@cdfa.ca.gov <br />Cooked chicken is being stored in trays outside. The temp is at 127 F. Adjust to 135 F or higher today and place cooked <br />chicken in warmers inside the facility. <br />CALCODE DESCRIPTION: Potentially hazardous foods shall be held at or below 41/ 45°F or at or above 135°F. (113996, 113998, <br />114037, 114343(a)) <br /> #13 Food Contamination and Adulteration <br />OBSERVATIONS: Employees are cutting chicken outside of the facility next to the BBQ. Also observed tortillas, salsa, and <br />lettuce. Discontinue practice today. Only the BBQing of meats is allowed outside. All food prep needs to be done inside the <br />facility. Correct today. <br />CALCODE DESCRIPTION: Any food is adulterated if it bears or contains any poisonous or deleterious substance that may render it <br />impure or injurious to health. No food containing artificial trans-fat, including oil, shortening, or margarine containing trans-fat may be <br />stored, distributed, or served by, or used in the preparation of any food within a food facility (113967, 113976, 113980, 113988, 113990, <br />114035, 114254(c), 114254.3, 114377) <br /> #32 Food Properly Labeled and Honestly Presented <br />OBSERVATIONS: There is a freezer in the retail area with repaackaged frozen meats without labels. Owner states that <br />those meats are not for sale. Provide a sign on the door stating meats are not for sale. <br />Facility is selling repackaged crema that is in a self serve cooler. Discontinue today and sell repackaged crema individually. <br />CALCODE DESCRIPTION: Any food is misbranded if its labeling is false or misleading, if it is offered for sale under the name of another <br />food, or if it is an imitation of another food for which a definition and standard of identity has been established by regulation. Food facilities <br />with 19 or more chains in the state shall disclose nutritional information.
